One of the great pleasures of the Maple Syrup Festivals that happen across our region at this time of year is the chance to experience pioneer customs and food. This is bannock, toasted rolled dough used by trappers, Indigenous people and wilderness explorers.
For the Sweetwater Harvest Festival today, raw bannock was already prepared. We rolled the dough into a snake-like length and wrapped it around a stick. Then we held it over fires, as if we were roasting marshmallows. It smelled delicious because it’s full of cinnamon.

Ooh, yes please! Sounds wonderful 🙂 And it’s great to keep traditions going.
Thanks for your visit. I’m in the Algarve right now and won’t be doing much visiting from here but I’ll be back 🙂 🙂
You’re welcome – and if you ever get a chance to try (or make) it, it’s so worth it.
what a fantastic site; i love all your photos! when i saw this post i thought, “what is bannon? some kind of animal i’ve never heard of?” no, bread! it looks delicious, and something i’d like to try sometime.
Thank you so much. I think one of the great things about blogging is introducing other people to things you take for granted. I find I learn something every day in the blogosphere.
