Roasting bannock over an outdoor fire

One of the great pleasures of the Maple Syrup Festivals that happen across our region at this time of year is the chance to experience pioneer customs and food.  This is bannock, toasted rolled dough used by trappers, Indigenous people and wilderness explorers.

For the Sweetwater Harvest Festival today, raw bannock was already prepared. We rolled the dough into a snake-like length and wrapped it around a stick. Then we held it over fires, as if we were roasting marshmallows. It smelled delicious because it’s full of cinnamon.
